Chicken noodle stir-fry

This is a very simple recipe and only takes 20 mins or so to prepare and cook. All my recipes are made from stuff from the super market that is as close to its natural form as possible.

Ingredients:


Chicken breast - enough for the number of people eating
- I usually do about 1 breast each.
1 red peper
2 cloves of carlic
salt & pepper
1 onion
handful of finely sliced cabbage
1 large carrot
(add any other vegetables you want really)
Noodles - the precooked ones in a bag are the easiest
2-3 tablespoons Soy sauce
1 teaspoon Cumin
1 teaspoon All spice
1 teaspoon of brown sugar
1 tablespoon Chinese rice vinegar - or any vinegar really

(All the ingredients are approx. feel free to adjust anything)

A wok

Method

Cut the chicken into approximately 1" cubes.

Chop the onion - either dice or slice.

Put about a tablespoon of veg oil with in your wok.

Get the wok very hot so the oil starts to smoke.

Press the "quiet" button on your smoke alarm.

Put the chicken, brown sugar, crushed garlic and onion in the wok - this can make a bit  of a mess of your wok with burnt-on sugar and can ruin the non-stick surface, so if this is a problem just leave out the sugar.

When the chicken is just cooked - test this by cutting into one of the larger pieces and it should not be pink in the middle - add the the vegetables, soy sauce, vinegar and spices.

Put the lid on the wok if you've got one - this stops the liquid evaporating.

Cook for about 10 more minutes.

Add the noodles - stir it all.

You may need to add some water to create a bit more sauce, esp. if you haven't got a lid for your wok.

Best served in bowls as the juice is usually quite thin - eat with a spoon so you can enjoy the juices at the end!
